This is a refreshing treat that can be used as a dessert, breakfast or snack. It is packed with nutrients and very easy to make! Vegan & Gluten Free.
Berry Vanilla Chia Pudding
Yield: 4 servings (4 cups)
Prep Time: 5 min, then soak for 30min+
3 cups of plant milk (or any milk of your choice)
1 cup of chia seeds
2 Tablespoons of maple syrup
1 cup of fresh/thawed berries – or any other fruit you may have
1 teaspoon of vanilla extract
a pinch of cardamom, nutmeg and/or cinnamon
fresh mint leaves for decoration (optional)
In a medium bowl, mix the milk with the chia seeds, maple syrup, vanilla and spices. Then pour on 4 ramekins or clear glasses and place in the fridge for at least 30 minutes to allow for the seeds to expand. Once the seeds have expanded add 1/4 cup of berries and mint leaves on top of each ramekin. Enjoy!
