Aquafaba Dark Chocolate Mousse

Yield: 6 servings
1 cup aquafaba (liquid from 15oz can of unsalted chickpeas)
3 oz dark chocolate chips (finely chopped)
1 tbsp soy milk (or milk of choice)
2 tbsp maple syrup
1/2 tsp cinnamon powder (optional)
1 tsp lemon juice or apple cider vinegar (optional)
1 – In a double boiler, melt the chocolate with the milk, then whisk to combine. Set aside to cool.
2- In the bowl of a stand mixer combine aquafaba liquid, maple syrup, cinnamon and lemon juice. Make sure the bowl and utensils are completely free of grease for the aquafaba to whip properly.
3- Using the whisk attachment, whip the mixture until reaching stiff peaks (about 8 minutes). The aquafaba should not slide from bowl when it’s ready.
4- Once the chocolate has cooled completely, fold about 1/3 of the aquafaba foam into the melted chocolate container to soften the chocolate, then gently fold this mixture into the remaining aquafaba foam as desired. The mixture will deflate a little bit.
5- Pour into 6 small bowls. Cover and chill in refrigerator.
6- Top with cacao nibs, shaved chocolate, toasted shaved coconut, pistachios or any fruit of choice.
