Easy Peasy Hummus!
Prep Time: 10 minutes
Yield: 1 medium bowl (5 inch)
1 can (15oz) of chickpeas or 1 1/2 cups of cooked chickpeas
Lemon juice (juice of 1/2 a lemon)
1/4 cup well stirred tahini
1/2 tsp garlic powder or 1/2 small garlic clove chopped
1 tbsp extra virgin olive oil, plus more for serving
1/2 tsp cumin powder
Salt to taste
1-2 tbsp water only if needed
Dash of ground paprika or sumac for serving
1- In the bowl of a food processor add the lemon juice, tahini, garlic, olive oil and cumin powder.
2- Drain the chickpeas (keep the liquid for another recipe) and add to the food processor. Process and add 1 tbsp of water at a time if needed, scraping sides of the bowl, until obtaining an even consistency. Add salt to taste.
3- Serve in a bowl, add olive oil and sprinkle paprika on top. Enjoy with veggies, chips, crackers, on a toast or as a flavor and nutrient boost to any meal.
